SUNY Delhi is thrilled to break ground on a new project at the College Golf Course at Delhi: a complete renovation and rebuilding of the clubhouse to make way for a state-of-the-art venue for a student-operated pub, restaurant, and event space to be named Bluestone.

Bluestone will be a learning laboratory for SUNY Delhi’s hospitality management and culinary arts students, allowing them to put classroom lessons into practice in a restaurant that is open to the public year-round.

Dr. David Brower, Dean and Professor of the School of Business and Hospitality Management, is excited for the new development.

“Bluestone is a truly unique opportunity for our students to develop hands-on skills in all aspects of restaurant operation and event management while enrolled at SUNY Delhi,” he says. “They will graduate with professional experience that will make them highly desirable candidates for positions throughout the industry.”

Bluestone will provide a culminating experience for students during their capstone courses.

“The opportunity to learn alongside our Certified Executive Chefs will inspire our students to reach their full potential and prepare them to enter the workforce with a definite advantage,” says SUNY Delhi Provost Dr. Kelli Ligeikis.

Bluestone will be an integral part of the SUNY Delhi curriculum as well as the food culture and dining experience in the Catskills region. It will replace SUNY Delhi’s current student-operated restaurant, Signatures, which is located on the college campus.

The new restaurant is estimated to open in May 2019. More information about Bluestone and its construction will follow.
